WINNING: The Herbivorous Butcher Is Expanding, With a Vegan Food Truck
It’s no secret that people love The Herbivorous Butcher! The all-vegan butcher shop, operated by brother-sister duo Kale and Aubry Walch, opened in 2016 and has been making headlines since. It was even featured on the Food Network program Diners, Drive-Ins and Dives!
With a wide array of mouthwatering vegan deli staples, the shop offers plant-based meats, cheeses, and butters all made from scratch. And while you might be lucky enough to find some of its incredible products at a vegan restaurant or natural food shop near you, The Herbivorous Butcher also ships them nationwide, which adds to its appeal and die-hard fan base.
According to a recent piece in the Star Tribune, the shop plans to launch a new vegan food truck this year. John Stockman, who will be the truck’s head butcher, told the newspaper:
As the popularity of our store continues to grow, we want to be able to make our food even more accessible to the Twin Cities. Basically, we will be doing two really big events on the West Coast in April and May, and then [we’ll] hit the streets [in the Twin Cities] when we are back in town.
Current plans estimate the truck’s return to Minneapolis around June. While the truck’s menu hasn’t been finalized, it will no doubt showcase many of the butcher’s amazing products, including some of the prepared foods (like gyros) already on the shop’s menu.
