Breakfast Meets Dessert With This (Vegan) Stuffed French Toast Recipe
Breakfast dishes are without a doubt my favorite kind of food. But I almost never eat breakfast foods during normal breakfast hours, so it makes perfect sense that I’m fangirling over this decadent AF vegan take on French toast. I mean, look at it—it’s pretty much dessert.
Thickly sliced bread is dipped in our plant-based batter, fried, and layered in an indulgent stack with vegan cream cheese, sliced banana, chocolate-hazelnut spread, and soy whip!!
Thickly sliced (vegan) bread
1 cup almond milk
1 tbsp. maple syrup
1/2 tsp. vanilla
1/2 tsp. cinnamon
1/2 tsp. nutmeg
1/2 ripe banana (for batter, optional)
1/2 tbsp. cornstarch Vegan cream cheese Vegan “Nutella”
Vegan whipped cream
1 ripe banana, sliced Powdered sugar
To make the batter, add almond milk, maple syrup, half a ripe banana (optional), vanilla, cinnamon, and nutmeg to a blender. Blend until smooth. Add cornstarch and blend one more time.
Take your bread and lightly dip each side in the batter. Fry in an oiled pan, preferably cast iron, until golden brown on both sides.
Stack cooked French toast with layers of vegan cream cheese, chocolate-hazelnut spread, and banana slices. Top with powdered sugar, vegan whipped cream, and more chocolate-hazelnut spread!
